Recipe: Lemon & Poppy Seed Cupcakes

Get baking...
Makes 12

Preheat oven to 180°/Gas 4
Beat together eggs and sugar
Melt the butter, pour in the milk and add to egg mixture
Mix together the flour, salt and baking powder, fold into mixture
Add lemon juice, zest and poppy seeds
Spoon mixture into muffin cases
Bake in middle of oven for 15 minutes
Leave to cool

Make the frosting by mixing the butter, cream cheese, icing sugar, lemon juice and zest until creamy
Smooth frosting over cupcakes and sprinkle with poppy seeds and lemon zest
